What is it? 
A Korean winter specialty made by air-drying fish in cold coastal winds, traditionally Pacific herring and today most commonly Pacific saury (꽁치). The fish is partially dried—not fully cured—resulting in a chewy texture and concentrated savory flavor, typically eaten with greens, garlic, and chili paste in southeastern Korea.
