A Korean ingredient made from Alaska pollock that has been repeatedly frozen and thawed in winter mountain air, then fully dried. This natural freeze–thaw process turns the flesh pale yellow and firm, giving hwangtae its name (“yellow pollock”) and a deep, savory flavor prized in soups such as hwangtae-guk.
