Korean side dishes banchan (반찬) categorized into three preparation methods: stir-fried (bokkeum), seasoned with sauces and spices (muchim), and braised and simmered (jorim)

bokkeum (볶음) - Stir-fried

  • Stir-fried fish cakes (오뎅볶음, odeng bokkeum)
  • Stir-fried anchovies (멸치볶음, myeolchi bokkeum)
  • Stir-fried eggplant (가지볶음, gaji bokkeum)

muchim (무침) - seasoned with sauces and spices

  • Spicy dried squid (오징어채무침, ojingeo chae muchim)
  • Spicy cucumber salad (오이무침, oi muchim)
  • Seasoned greens (나물, namul) — spinach or bean sprouts etc

jorim (조림) - braised and simmered

  • Soy-braised beef (장조림, jangjorim)
  • Braised mackerel (고등어조림, godeungeo jorim)
  • Braised lotus root (연근조림, yeongeun jorim)
  • Braised burdock (우엉조림, ueong jorim)
  • Soy-braised black beans (콩자반, kongjaban)
