The Dutch word for herring, eaten raw and lightly salted in a tradition unique to the Netherlands. Held by the tail and lowered into the mouth, or served chopped with onions and pickles on bread. The arrival of Hollandse Nieuwe — the season's first young herring — is a celebrated annual event.
