mapo tofu (麻婆豆腐)
What is it? 
A Sichuan dish of soft tofu simmered in a spicy, numbing sauce of doubanjiang, chili oil, and Sichuan peppercorns, topped with minced meat. The name refers to the pockmarked face of the woman said to have created it — though this is folk etymology. One of the most internationally recognized dishes of Sichuan cuisine.
